Duck is one of the most celebrated dishes of Beijing, or Mandarin Chinese, cuisine, with a history of more than 400 years. Chef Chen keeps with this tradition and add his precise 28 cuts to the duck. The duck is brined and roasted then flash fried for a crispy skin. It's gluten free and served with Green Onions, Hoisin Sauce (not gf), and Moo-Shu Wraps (not gf) -- very limited supply so it's first come, first served and available by Whole Duck ($74) or 1/2 Duck ($37).
